Sick of the usual beef, chicken or fish? Well, here’s a quick and easy meal that’s definitely “outside the box.” Be adventurous and give this a try, and you will not be disappointed. You may purchase frog legs (usually frozen) at your local Asian store along with the palm sugar and green peppercorns, which are young peppercorns before they are dried. They add a subtle pepper flavor to any dish.
Frogs Legs with Chili and Basil (Kha Kob Phad Ped)
1/3 cup oil
8 pairs frog legs
1 Tbsp. green peppercorns
3 red chilies, sliced lengthwise
3 inches galangal, cut into fine matchsticks
2 Tsp. fish sauce
1/2 Tsp. chopped palm sugar
large handful Thai Basil leaves
1.) Heat oil in wok until very hot
2.) Add frog legs and peppercorns and stir over high heat for a couple minutes
3.) Add chilies, galangal, fish sauce and sugar. Mix well and cook for another minute
4.) Stir in basil, remove from heat and serve (with white rice).
